Roaster's Comments

This is our third year purchasing this beautiful coffee produced by Jaime Guevara san.

My first coffee I roasted at Kurasu was Jaime-san’s natural process, and every time I receive his coffee it feels like a little reminder of my journey here since then.

I always felt that what makes Jaime-san’s coffee special is its ume or plum-like flavor and aroma reminiscent of violet, but this year’s crop is giving us some depth with sweetness on top of those lovely qualities. It’s not light, it’s a substantial, dense sweetness that stretches and reaches far - I may sound a bit too abstract here but hopefully you’ll get what I mean.

These kinds of changes and developments make coffee as a natural product so interesting, and sourcing from the same producers over a long period of time makes it even more appealing.

We adjusted the roasting process too, changing from our usual medium-light for this coffee to light roast. Roasting further on can bring chocolate or caramel-like sweetness out of coffee, but that’s what comes from roasting, not necessarily from the green beans' characteristics.

Some green beans benefit from such sweetness to have more cup balance, but we felt it is unnecessary for this Pacas natural and decided against it. 

This coffee makes great espresso and filter alike- ¡Muchas Gracias, Kadokawa-san (the importer)!
