Product Details
Karmarchi is a 1,000 hectare farm dedicated to Geishas with about 150 hectares for production. The farm sits at the birthplace of the geisha varietal and just 5km away from Geisha Village in southwestern Ethiopia. They primarily grow Gori Geishas and Geisha 1931. Both are native to the Geisha forest but differ in genetic lineage and selection criteria . The farm plants seeds taken from the Geisha forest, 15km away.
The beans are sealed in tanks for 8 days to break down the fruit and mucilage before being moved to African drying beds under shade to slowly dry and cure under plastic for 20-30 days until the cherries hits a moisture level of about 11%.
Gori geisha is a wide spectrum of wild geisha plants found in the Geisha forest. Similar to how Ethiopian heirlooms are classified within a broader criteria and more genetically diversified. It has a more fruit forward profile with softer undertones and sweetness. Geisha 1931 is a varietal native to the Geisha Forest as well but has been selected through stricter criteria of how the plant, fruits and beans look and also the cupping and aroma profile of the coffee. It is chosen because it closely matches the Panama geisha varietal in both aroma and flavour. It has a brighter citric acidity and showcases more floral and stone fruit flavours.
